What is the advantage of hybrid freezing?
When meat and other foods are frozen in the conventional way, the water contained in the cells turns into large ice crystals, leading to a large amount of moisture loss when the products are thawed. This is a major cause of loss of flavor. If the food passes the temperature zone between -1°C and -5°C quickly, the ice crystals are kept small, thus minimizing the loss of flavor.
